DW-13 produces various aromas during fermentation. It enhances volatile thiol aromas such as passion fruit, grapefruit, gooseberry and guava and produces esters responsible for tropical fruit and floral aromas. It is therefore an ideal yeast strain when fermenting various types of fruits. 

Recommended for

Can be used for white wines and other tropical fruits. Ideal for mampoer. 


  • For fermentations smaller than 100L: 1 grams per 1L
  • For fermentations larger than 100L: 25 grams per 100L


  • Min temperature: 12 °C
  • Max temperature: 16 °C
  • Cold tolerance: 10 °C
  • Alcohol tolerance: 17 % v/v
  • Osmo-tolerance: 24,9 brix
  • Fermentation kinetics/rate: Very strong fermenter - cold fermentation is advised
  • Nutrient demand: Low
  • Volatile acidity production: Generally lower than 0,3 g/L
  • Species: S. cerevisiae
