A superb emulsifier that can be used with alcohol to emulsify and stabalise cream liqueurs and even vinaigrettes.
The required amount of alcohol suspender used will depend on the ratio of oils, fats and alcohol/water. Start by using 5ml alcohol suspender per Litre liquid. Mix thoroughly with a blender and check separation or curdling (with dairy products). If separation/curdling occurs, increase quantity of alcohol suspender.
