The Art of Making Aquavit at Home

While Norwegian aquavit follows strict production regulations, you can create a homemade version that captures the essence of this classic drink. Whether you choose to infuse and enjoy it as is or take the extra step of distillation, this recipe will help you craft a flavorful and aromatic aquavit.

Ingredients:
- 2L of grain- or potato-based vodka or neutral spirits (43% ABV)
- 35g caraway seeds
- 6g coriander seeds
- 6g dill seeds
- 6g fennel seeds
- 10g dried orange peel
- 10g dried lemon peel
- 2g star anise
Instructions:
1. Prepare the Botanicals
- Lightly crush the caraway, coriander, dill, fennel seeds, and star anise using a mortar and pestle. This helps release their essential oils and flavors.
2. Combine with Spirits
- Place the crushed spices and citrus peels in a sealable glass jar.
- Pour the vodka or neutral spirit over the botanicals, ensuring full submersion.
- Store in a dark, cool place.
3. Infusion
- If not distilling, taste the infusion every 4-8 hours to monitor flavor development.
- Once the desired flavor is reached, strain the spirit through cheesecloth to remove solids.
- If needed, strain again through a coffee filter for extra clarity.
4. Optional: Distillation (Recommended for a Smoother Aquavit)
- After 48 hours of infusion, strain out the solids and transfer the liquid to a still.
- Distill slowly at a low to medium rate without reflux to retain flavors.
- Discard the first 10-20ml of distillate.
5. Final Adjustments
- Dilute the aquavit to an ABV between 37.5% and 60%, as distillation increases alcohol concentration.
- If a slightly sweeter profile is desired, add inverted sugar (up to 15 g/L).
- Consider aging in an oak barrel for several months for added complexity. If a barrel isn't available, use a spirit oaking kit with oak chips and staves.
6. Bottling
- Once adjusted to your liking, bottle the aquavit in clean glass containers.
- Your aquavit is now ready to enjoy!
